Instead of always having to go out for ice cream, it’s nice to be able to create your own with ingredients that are generally accessible and easy to tailor to taste. Using frozen bananas as a base has become a staple for homemade ‘nice-cream’ since they offer just enough sweetness and a rich, creamy consistency without having to use a traditional ice cream maker. I also like using this versatile fruit because it offers some additional fiber (3-4 grams/per medium banana), nutrient density (including B-vitamins, Vitamin C, Magnesium, Manganese and Potassium) and enough carbohydrates (23-26 grams/per medium banana) to help replenish glycogen from an active lifestyle or daily activities. Ingredients for 2-3 servings:
• 3 Large OR 4-5 Medium Bananas (chopped and frozen 4+ hours)
• ¼-1/3 cup of Coconut Cream or Milk (based on consistency desired – chill for 30+ min.)
• ¼-1/3 teaspoon of Sea Salt (optional – to taste)
• 1 ½ teaspoons Pumpkin Spice or 1 tsp Cinnamon + ½ tsp Nutmeg
• ½ tsp Pure Vanilla Extract
• ¾-1 cup Pumpkin Puree (based on taste – chill for 30+ min.)
Place ingredients in a food processer or blender.
Blend until consistency appears soft and smooth.
Serve immediately as soft serve, or for a firmer consistency, stick in freezer for 30-45 minutes. Remember, you can always tailor things to suit your taste, so adjust the recipe until you find something that’s perfect for your palette!
