Healthy Baked Oatmeal Cups

Back-to-school time means busy days and nights for parents (and non-parents)! All of the rushing around can leave you reaching for fast-food or packaged bars for quick breakfasts. While there is nothing wrong with convenience foods every once in a while, you want to make sure you and your family are getting a nourishing start to the day most of the time, especially on hectic days when you need lasting energy to power you through.

Prepping a big-batch breakfast ahead of time can help you feel more organized and ensure you have a healthy meal ready to go in the mornings. These baked oatmeal cups are the perfect solution for make-ahead breakfasts for the week. They are filled with whole-grain goodness for fiber and lasting energy, as well as protein to keep you full all morning. Add any mix-ins that you like, such as fresh or dried fruit, nuts, or chocolate chips! Individual portions mean that these oatmeal cups are easy to grab and go when you’re in a hurry.

Store oatmeal cups in an airtight container in the refrigerator up to 5 days, or freeze up to 2 months, and reheat as needed.

Baked Oatmeal Cups

•2 large eggs
•1 ¼ cups milk, any kind
•1 tsp vanilla extract
•¼ cup honey or maple syrup
•¼ tsp sea salt
•1 tsp ground cinnamon
•1 tsp baking powder
•2 cups rolled oats (GF certified if necessary)
•½ cup dried or fresh fruit, nuts, or other mix-ins

Heat oven to 350°F. Spray a 12-well muffin tin with oil.
In a large bowl, whisk together eggs, milk, vanilla and honey. Stir in salt, cinnamon baking powder and oats.
Scoop mixture by ¼ cup into muffin tin. Top each with mix-ins of choice.
Bake for 20-25 minutes. Remove from the oven and cool before removing and storing oatmeal cups.
