31 Healthy Pumpkin Recipes To Use Up A Whole Pumpkin

Pumpkin season is here! Pumpkins are very similar to squash, and while pumpkin is normally used in sweet treats and baked goods, pumpkin has many uses from soups and stews to granola and pancakes. Pumpkin flesh is a great source of vitamin A, which helps with your eye health and immune function, as well as dietary fiber and vitamin C, while pumpkin seeds contain healthy fats, fiber, iron, zinc and magnesium.

While canned pumpkin puree is certainly easy to use, you can also cook and use whole pumpkins easily. Cooking a whole pumpkin helps you to remove the seeds more easily so that you can roast them and use them in the recipes below. Then you can scoop out the flesh to use just as you would use canned pumpkin. Cooked pumpkins also make festive vessels to serve soup and chili.
